Lecithin also known as choline is a very efficient natural emulsifier of fats which helps the metabolism to convert food fats into energy instead of building up in the body. Lecithin is a vital constituent of the lipoproteins that carry fat and cholesterol molecules in the blood stream. Lecithin supports synthesis of high-density lipoproteins (i.e., HDLP also know as "good" cholesterol) by the liver. Lecithin is a highly valuable supplement for those on a low cholesterol diet.
